Meatballs are a real family favourite at our place.
Here I take a shortcut by cooking them in a super hot oven along with some broccolini which becomes slightly charred.
It's a quick and satisfying dinner that is packed full of flavour.
Cooking the meatballs in the oven is incredibly simple as you avoid having to stand over a hot pan flipping and turning.
It also means there is next to no washing up as the meatballs and broccolini are cooked together on the same tray. A perfect mid-week dinner!
I add some fresh coriander, spring onions, toasted sesame seeds and a little chilli oil to really bring the dish to life.
Tips:
- Swap the broccolini for broccoli: Simply cut off the florets and then peel the tough stems and slice.
- Substitute the pork mince with chicken or beef. Choose a fattier pork mince to ensure the meatballs remain moist.
- Shaping meatballs: Roll the meatballs with slightly wet hands or allow to firm up in the fridge for 30 minutes to make it easier to shape.

- 1.Preheat oven to 230°C. Line a large baking tray with baking paper.
- 2.Trim the ends of the broccolini and halve any large stems lengthwise. Drizzle broccolini with olive oil and season with sea salt. Arrange on the tray and roast in the oven for 8-10 minutes or until just beginning to colour.
- 3.Meanwhile, prepare the meatballs by mixing the remaining meatball ingredients in a large bowl. Your hands are best for this. Make sure everything is really well incorporated and season lightly with salt and pepper. With slightly wet hands, shape the mixture into golfball-sized balls. Arrange amongst the broccolini on the tray and return to the oven to continue cooking for 8 minutes or until meatballs are just cooked through.
- 4.While the meatballs are still cooking, combine all of the ingredients for the glaze in a small pot and simmer over a medium heat for 1-2 minutes or until slightly reduced. Brush the glaze onto the meatballs and cook for a further 2 minutes in the oven.
- 5.Serve the meatballs and broccolini with steamed brown rice topped with spring onions, coriander, sesame seeds, a drizzle of sesame oil and a spoonful of chilli oil or sauce, if using.
