Delicious one-pot dinners with minimal prep and washing up make for the perfect mid-week meals.
This simple recipe cuts out the need to pre-boil the pasta. Simply sear the chicken, toss in a pack of store-bought gnocchi, remaining ingredients and bake.
It's ideal for busy weeknights because, in about 30 minutes, you have a one-pot dinner that's packed with flavour.
Tips:
- For even less prep, use chicken tenderloins instead of breast fillets.
- Vegetarian? You can make this recipe without the chicken and it's just as delicious.

- 1.Preheat oven to 200°C.
- 2.Season the chicken pieces with salt and pepper. Then heat the oil in a large pot (that is also oven-proof) and sear the chicken until it's just golden but not cooked through. Turn off heat.
- 3.To the same pot add the gnocchi, onion, tomatoes, stock and baby spinach. Then add the pesto and toss to evenly cover all ingredients.
- 4.Bake in the oven for about 20 minutes, tossing once halfway through.
- 5.Serve with shaved parmesan and toasted pine nuts.
