Delicious one-pot dinners with minimal prep and washing up make for the perfect mid-week meals.

This simple recipe cuts out the need to pre-boil the pasta. Simply sear the chicken, toss in a pack of store-bought gnocchi, remaining ingredients and bake.

It's ideal for busy weeknights because, in about 30 minutes, you have a one-pot dinner that's packed with flavour.

Tips:

  • For even less prep, use chicken tenderloins instead of breast fillets.
  • Vegetarian? You can make this recipe without the chicken and it's just as delicious.

  1. 1.Preheat oven to 200°C.
  2. 2.Season the chicken pieces with salt and pepper. Then heat the oil in a large pot (that is also oven-proof) and sear the chicken until it's just golden but not cooked through. Turn off heat.
  3. 3.To the same pot add the gnocchi, onion, tomatoes, stock and baby spinach. Then add the pesto and toss to evenly cover all ingredients.
  4. 4.Bake in the oven for about 20 minutes, tossing once halfway through.
  5. 5.Serve with shaved parmesan and toasted pine nuts.
